Catch of the Day - Skipjack

Dating to the days of ancient Hawaii, Skipjack has played a vital role in the cuisine of the islands, found in an assortment of dishes and is commonly broiled or fried. Island chefs love Skipjack for its firm texture and rich flavor, and it is said that the flavor of Skipjack is much stronger that Ahi, making it a favorite in dishes like Poke or Sashimi. Hawaiians also love dried Skipjack, or Aku, a jerky like product that is found in many grocery stores or homemade, and is very tasty with another local delicacy, Poi. The two have been enjoyed together for hundreds of years, and should definitely be sampled following your expedition. Throw in an ice-cold local beer, and you have yourself a local favorite.
